I love onions and I am always adding onions to my recipes. When I saw Onion Crunch I knew that I needed to try this product out. Onion Crunch sent me two bottles and some sample packs in order to do this review. When the box arrived I could not help myself, I opened up the sample packs and ate them right away. On the side of the bottle it says you can add Onion Crunch to hamburgers, hot dogs, salads, eggs and much more. However, what they do not list is that you can just pour this yummy goodness in your hand and eat it that way. Yes, I am very guilty of just pouring some in my hand and eating it. 

Onion Crunch is crunchy without being overly crunchy. This product is hands down the best onion topping I have came across. I usually use the Walmart brand or French’s but Onion Crunch blows those brands away!

I knew that I couldn’t just sit around eating Onion Crunch by itself so I decided to figure out a way to cook with it. Since I’m trying to lose weight I also wanted my recipe to be healthy. 

Here is the recipe I came up with:

Onion Crunch Review

Ingredients:

3 to 4 chicken breasts

1 Jar of Salsa

Pepper jack cheese, shredded

Onion Crunch

2 eggs

1 cup flour

1 tsp. Salt

1tsp. Pepper

Directions:

Whisk egg in a bowl and add flour to another bowl. 

Add salt and pepper to each chicken breast.

Dip chicken into flour mixture then into the egg wash.

Coat chicken breast in onion crunch.

Bake chicken in a pre-heated oven at 350 degrees for 40 minutes. Cover the baking dish with foil for the first 20 minutes. 

Once the chicken has cooked for 40 minutes spoon salsa over the chicken breast and add pepper jack cheese. Cook for about five minutes or until cheese is melted.

Ingredients
1 tbsp. olive oil
1 package of sausage (I use Evergood Hotlinks)
1 1/2 cup diced onions
2 cloves garlic, minced
2 cups chicken broth
1 10 ounce can Ro-Tel Tomatoes and Green Chiles
1/2 cup heavy whipping cream
8 ounces uncooked penne pasta
1 tsp. pepper
1 1/2 cup Monterey Jack cheese, shredded
Chopped scallions
Instructions
Heat oil over medium high heat.
Add the sausage and onion, cook until lightly brown. Add in garlic and cook for about 30 seconds.
Add the broth, Ro-Tel, heavy cream, uncooked pasta and pepper.
Stir the mixture together until all ingredients are combined.
Bring to a boil, reduce heat to simmer and cover the pot.
Cook for 15 to 20 minutes or until pasta is cooked, stir once or twice while cooking.
Remove the skillet from the heat and stir in the cheese.
Top with scallions.

Ingredients
1 tsp. Olive Oil
1/2 pound cubed ham
1/2 pound hot links, cut into 1/2 inch-thick slices
1 large onion, chopped
1 large green bell pepper, chopped
1 large red bell pepper, chopped
3 cloves of garlic, minced
1 28 ounce can diced tomatoes, undrained
1 10 ounce can chicken broth
1 cup uncooked rice
1 tbsp. Worcestershire sauce
1 tsp. salt
1 tsp. cajun spice
1 tsp. dried thyme
1 tsp. pepper
1/2 tsp. red pepper
1 package frozen ready-to-cook shrimp, thawed.
Instructions
1. Preheat oven to 350 degrees. Spray 13x9-inch baking dish with nonstick cooking spray.
2. Heat oil in a large skillet over medium-high heat. Add ham and sausage. Cook and stir for about 5 minutes or until sausage is lightly browned on both sides. Remove from skillet and put into prepared baking dish.
3. Place onion, bell peppers and garlic into same skillet; cook and stir for 3 minutes. Add to sausage mixture.
4. Combine tomatoes with juice, broth, rice, Worcestershire, salt, thyme, cajun spice, black pepper and red pepper in same skillet. Bring to a boil over high heat. Reduce heat to low and simmer for 3 minutes. Pour mixture over sausage mixture and stir until combined.
5. Cover tightly with foil and bake for 45 minutes or until rice is almost tender. Remove from oven and place shrimp on top of rice mixture. Bake, uncovered for 10 minutes or until shrimp is pink and opaque.

Veri Peri Sauces Review

Cooking is one of my favorite things to do. I love trying out new recipes and new ingredients. When I was given the opportunity to review Veri Peri Sauces, I jumped at it! Just looking over their website I was already intrigued because the sauces sounded like something I had not tasted before. The Veri Peri sauce is from Africa and is the number one selling sauce in Africa. 

Once I received the sauces I opened all of them up and tasted them right away. I instantly liked the mild sauce and the lemon & herb sauce. I was surprised that I initially was not a fan of the garlic since I love anything garlic. However, after cooking with the garlic and adding it to chicken breasts I was hooked! The garlic sauce adds so much flavor to the chicken and I was very happy with the overall flavor. I found that the lemon & herb goes great on potatoes and other vegetables. 

Veri Peri Sauces

The hot and the veri hot was way to hot for me! I love spicy but this stuff took spicy to a whole new level of hotness. I do have to say that the flavor of both of the hot sauces was very good, I just could not handle the heat. 

I am 100% convinced that Veri Peri Sauces can spice up even the most bland recipe. I will be using these sauces in a lot of my recipes. 

Another thing that I really liked about the Veri Peri Sauces is they are very low in calories. Lately, I have been watching what I’m eating and some sauces really add a lot of fat calories but thankfully Veri Peri does not.

If there is one thing I love to do it is cook! I do not like cooking the same thing over and over again so I am always on the hunt for new recipes. I probably have hundreds if not thousands of recipes I have either tried or want to try. I finally came up with my top ten recipes everyone should try at least once. I hope you find something on this list to inspire your inner chef.

  1. Pad Thai – My husband loves Pad Thai and likes it to taste very authentic. After doing some research online I found this recipe and decided to give it a try. My husband was instantly hooked and is always asking me to make this dish. However, if you do not cook a lot of Thai food the ingredients in this list can be a little extensive. I had to go to a Thai grocery store to get most of the stuff I needed. I should also note that this recipe is a little spicy for most people. 
  2. Pan Roasted Chicken – I personally love chicken but my husband complains when we eat chicken all the time, so I’m always on the look out for new ways to make chicken. The reason I love this recipe is it is super easy to make, does not require a lot of ingredients and you cook a side dish at the same time. This is one of my go to dishes when I am not in the mood to cook. The chicken and veggies have a ton of flavor and even the kids eat this without complaining.
  3. Parmesan Tilapia – I love fish and salmon happens to be my favorite but feeding a family of five salmon can get a little pricey. I was recently introduced to tilapia and just fell in love with how versatile it is. Not only is tilapia cheap but it cooks super quick making this one of my go to foods when I am not really in the mood to cook. This recipe is amazing and cooks up really quick. My kids love it and usually ask for seconds. Serve this over some white or brown rice and you will have a complete meal.
  4. Braided Spaghetti – This is a recipe I was going to do for this blog but let’s just say my version did not come out as pretty. After looking at the picture you might think this is going to be a time-consuming recipe, but it is actually pretty easy to make. I’m not a big fan of traditional spaghetti so having a new way to eat it was a nice change. Pair this up with a crisp salad and you will have a happy family.
  5. Bacon-Jalapeno Cheese Ball – This obviously isn’t a recipe for dinner but it is worth being on my list of top ten recipes to try. This was the first cheese ball I had ever made and I was surprised at how simple it really was. This was really easy to make but does get your hands a little messy.
  6. Authentic Tamales – Mexican food is by far my favorite type of food. If it was up to me we would eat Mexican food every single night. Growing up my friends mom would always make tamales at Christmas time. It never really understood why she only made them at Christmas time until I attempted to make them a few months ago. These were a lot of work but the end result was amazing and I would defiantly make these again. Something about making homemade tamales in the kitchen with my daughter just brought a sense of happiness to me. I should note that the instructions in this recipe are extremely easy to follow so if you are going to attempt to make tamales for the first time this is an excellent recipe.
  7. Easy Taco Salad – This is one of those dishes we normally include in our weekly menu. We used to Taco Tuesdays now we do Taco Salad Tuesdays. This is another really simple recipe and you can change it up to fit your families personal tastes.
  8. Crock Pot Rotisserie Chicken – Most people love those pretty Rotisserie chickens you can buy at the grocery store but thanks to Pinterest I can now make a beautiful Rotisserie in my crock pot. I usually make this on the weekends and then shred it and use it in different recipes throughout the week. I must say I was skeptical when I first saw this recipe but after trying it I am hooked and no longer buy over priced Rotisserie Chicken’s at the store.
  9. Cherry Beer Margaritas – Let me first start off by saying I do not really enjoy alcohol but this drink is delicious! I was looking on Pinterest for an easy drink for a BBQ we were having last summer. I came across this pin and thought this sounds easy, yummy and refreshing. Everyone that had it really enjoyed it and I would highly suggest making this at your next BBQ.
  10. Cheesecake Stuffed Strawberries - No top ten recipes list is complete without a desert and what better than a quick and easy one. Cheesecake Stuffed Strawberries is genius! I mean who doesn’t love cheesecake and strawberries? Not only is this delicious but you are bound to impress your guest with this desert.

Baked Potato Soup In The Crock Pot

Baked Potato Soup is a favorite in our family and prior to finding this amazing recipe on Pinterest. I have always cooked baked potato soup with flour, butter and lots of milk! The recipe I am now using contains no milk! Yes, you did hear that correctly…NO MILK! Not only does this recipe contain no milk but it is so easy to cook. I will also admit that this recipe taste a lot better than the one I was using before.

Ingredients:

5lb bag of potatoes

1 white onion

2 tbs. of fresh garlic (powdered works fine as well)

64 oz. of chicken broth ( I use two 32 oz. boxes of chicken broth)

Cream cheese 16 oz.

Sour Cream

Bacon

Green Onions

Shredded Cheese

Salt

Pepper

Instructions:

Dice up potatoes into small pieces. The recipe calls for 5 pounds of potatoes but I find that 2.5 to 3 is more than enough for my family of 5.

Chop up onion and garlic.

Add the potatoes,onion and garlic to the crock pot.

Pour chicken broth over the potato and onion mixture until onions and potatoes are completely covered. Don’t worry if you didn’t use all 64 oz. but be sure to save it for later.

Put the lid on and cook on low for six hours. I then cook the potatoes on high for an additional hour to two hours or until potatoes are soft.

Add chicken broth to the crock pot as needed. I usually ended up needing to add a few more ounces throughout the cooking.

Once the potatoes are tender you will transfer the potatoes and broth to the food processor. You may have to do this in several batches depending on the size of your food processor. Puree the potatoes and onion mixture while adding the cream cheese. Once puree top with bacon, shredded cheese, sour cream and green onions. We usually eat this with fresh sourdough bread.

Tip: I reserve some of the potatoes and manually mash them up and add them to the puree. I like my baked potato soup a little lumpyand this does the trick.

Quick and Easy Taco Salad

My mother-in-law bought me the Perfect Tortilla Maker for Christmas and boy has it been getting a work out at my house! We are now having taco salad night at least once a week. I was a little skeptical at first since most of the as seen on TV stuff is never as wonderful as it looks. Using the Perfect Tortilla maker is super easy and really cuts down on cooking time. Making a taco salad is so much easier now. Usually when we have tacos I have to sit over the stove frying up shells since we don’t like store-bought shells. So here is my simple taco night recipe!

Ingredients:

  • 4 Chicken Breasts
  • Flour tortillas (I use jalapeño cheddar tortillas…AMAZING!)
  • Your favorite marinade ( I use lime and Chef Murritos)
  • Lettuce
  • Red Onions
  • Refried Beans
  • avocados
  • Shredded Cheese
  • Sour Cream
  • Tomatoes
  • Your favorite hot sauce

Instructions:

Marinate your chicken in your favorite seasoning. Letting it marinate over night is recommend but as we all know not always possible.

Send your husband out to the grill to cook up those chicken breasts!

While your husband is slaving away on the grill pre-heat your oven to 425 degrees, chop up the lettuce, onions, tomatoes and the avocados.

Place the tortillas in the Perfect Tortilla Maker (do not use any non-stick in the bowl) letting them cook for 5 to 8 minutes. I check on the tortillas around the 6 minute mark but they usually need a few more minutes. I like mine crunchy! Take note that after they come out of the oven they will firm up a little more.

While the tortillas are cooking shred your cheese and warm up the beans.

Your husband should now be in the house with yummy chicken. Shred up the chicken and make yourself a yummy taco salad!

Tip: I like to use a fork to poke a few holes in the tortillas, this prevents air bubbles while cooking. 

Cheesy Chicken Recipe

 

Creamy Chicken

 

Finding new recipes is a hobby that probably takes up way to much of my time. I truly can’t help it because I love to cook and I despise cooking the same things over and over again. I am always on the look out for new recipes to try and this week I found this wonderful recipe on Pinterest.

If you are in a need of a new chicken recipe that is easy and yummy this might be the one for you! My family loved it and it was super easy to make.

What you will need:

  • 4 chicken breasts
  • 1 sleeve of Ritz crackers
  • 1/4 tsp. of salt
  • 1/2 tsp. of pepper
  • 1/2 tsp. of red pepper flakes
  • 1/4 cup of milk
  • 3 cups shredded cheese
  • 1 10 oz. can cream of chicken
  • 2 tbsp. sour cream
  • 2 tbsp. butter

Instructions: 

Pre-heat oven to 400 degrees.

Grind your Ritz into fine crumbs. Mix the crumbs with the salt, pepper and red pepper flakes.

Put the milk, cheese and Ritz crumbs into bowls and line them up in that order.

Dip each chicken breast into the milk, then into cheese (pressing the cheese into the chicken to ensure it sticks) and then covering in the Ritz crumbs.

Place each chicken breast into a baking dish that has been sprayed with non-stick spray.

Cover with foil and bake for 35 minutes then take off the foil and bake for an additional 10 minutes.

Sauce:

Pour cream of chicken into sauce pan along with a half can of water, butter and sour cream. Whisk together until combined and then spoon over chicken right before serving.

Yummy Cherry Crisp Recipe

I made some delicious Cherry Crisp the other day, and I thought I would share this easy recipe!! It was so amazing, and I felt like I could have eaten it all in 1 sitting, hehe! I used a gluten Free Baking Flour, but you can use regular flour it will work just the same!

Cherry Crisp Recipe
2- 21 ounce Cans of Cherry Filling
1/2 cup Oats ( I used Instant)
1/2 cup Brown Sugar
1/3 cup Flour
1/2 teaspoon Baking Powder
1/2 cup Butter
Preheat oven to 350 Degree’s
Take a 9 x 9 baking pan and grease it, and then add the 2 cans of cherry pie filling to cover the pan. In a Separate bowl you will Then you will melt the butter, and then mix in all the other ingredients in. Stir until well mixed and then spread over the cherries, trying to cover the whole top part. Put into oven and bake for approximately 40 minutes or until the top is light brown and cooked through! Let cool and serve!
